Cooked, shredded pork
1 can refried beans
1 packet pork gravy mix
1 can Rotel tomatoes
Chopped tomatoes
Chopped lettuce
Grated cheddar cheese
Flour tortillas

Directions:
I slow cook a pork tenderloin and use the leftover pork for these burritos. Be sure to heat enough so that it falls apart using a fork.
Heat the refried beans in a frying pan.
Make the pork gravy according to package instructions. Then add the Rotel tomatoes and heat.
Heat the tortillas in the microwave to soften.
Assemble the burritos as follows:
Place small amount of pork, beans, sauce, in burrito and fold ends over and turn over on plate. Pour more sauce over burrito, then top with shredded lettuce, tomatoes, and cheese. Add salsa if desired!

I created this recipe when I lived in Denver many years ago. It has become much simpler than it originally was, now that I've discovered gravy mix and Rotel tomatoes! It's a great way to use leftover pork - in fact it often is the reason for cooking the pork tenderloin in the first place!
