Ingredients: 2 quarts vanilla ice cream 1 quart chocolate ice cream 2 9 x 1 1/2 inch chocolate cake layers, made from cake mix 1 jar (16 ounces) cherry preserves 1 pint (2 cups) heavy cream 1 container (4 ounces) chocolate sprinkles Chocolate curls, optional Chopped pistachio nuts, optional

Directions:1. Soften ice cream, one quart at a time, in a chilled bowl. Spread each quart into a foil-lined layer pan; freeze until firm.
2. To assemble cake; split each layer in half to make 4 thin layers. Place one layer on a plate; un-mold a vanilla ice cream layer on to the cake layer; spread 1/3 of the cherry preserves over the ice cream; top with another cake layer. Freeze.
3. Repeat step 2, un-molding the vanilla ice cream and layering with cherry preserves between the two remaining cake layers. Freeze.
4. when the two double layer halves are frozen, place one of them on a serving plate; un-mold the chocolate ice cream onto the cake; top with remaining double layer cake halves. Refreeze until firm.
5. Whip heavy cream in medium bowl until stiff; spread cream thickly on top and sides of cake. Sprinkle side of cake with chocolate sprinkles. Pipe a ring of cream top of cake do hold several spoonfuls of preserves, and a border of cream around the bottom of the cake. Decorate cake with chocolate curls and chopped pistachio nuts. |
