2 1/2 c. flour
1 1/2 c. sugar
1 1/2 c. cooking oil
3 eggs, beaten
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. vanilla
3 c. carrots, shredded

Cream Cheese Frosting:
8 oz. cream cheese
1/2 c. butter
1/2 tsp. vanilla
3-4 c. powdered sugar

Directions:
Directions:
Place oil & vanilla in bowl and add eggs. Add sugar and mix. Combine all remaining ingredients until moistened. (it will be a thick batter) Stir in shredded carrots. Bake 35-40 minutes at 325º.

Let cool & frost with homemade cream cheese frosting!
