6 - 8 boneless chicken breasts
1 stick of butter
1 can chicken broth
3 tbsp. lemon juice
1 sm can sliced mushrooms (optional)
1 tbsp. cornstarch
1 lemon (sliced)
parsley
salt and pepper

Directions:
Directions:
Melt 1/2 stick butter in frying pan. Salt and pepper cutlets then fry until golden brown on both side. Transfer cutlets to baking dish. Using the same pan from frying the cutlets (use drippings), add chicken broth, remaining 1/2 stick of butter, lemon juice, mushrooms and cornstarch. Simmer until sauce thickens, approximately 10 minutes. Pour sauce atop cutlets. Add slices lemon on top of chicken and parsley for garnish. Bake for 30 minutes at 350 degrees.
