CRUST FOR RICOTTA PIE
3 cups flour
2 T sugar
1 tsp salt
2 tsp baking powder
1/2 cup lard (generous)
1/2 cup butter
2 eggs
1 tsp vanilla
5 T water

FILLING
2 1/2 lbs whole milk ricotta cheese
18 eggs
2 cups whole milk
2-3 lemons - juice and zest
1 lb sugar

CRUST
Put flour, baking powder and salt in bowl. Add the butter and shortening. Cut in the butter and lard with a pastry cutter until the pieces are pea size. Work the dough until the mixture resembles cornmeal. When ready, add eggs and water (one T at a time). Roll out to fit a 11/13 glass baking dish.

FILLING
Mix softened ricotta with well-beaten eggs, add milk, sugar lemon. Pour over crust and sprinkle top with cinnamon.

Bake 1 1/2 hours at 350 until knife inserted in center comes out clean.

This was made only for Easter. As with all of Grandma Bell's recipes, this makes a lot. The filling is deep and good. HAPPY EASTER
