1 large egg
2 tsp vanilla
1 cup fruit jam- any flavor

Directions:
Combine flour and baking powder; set aside
With a mixer; cream butter and sugar. Add egg and vanilla and beat until smooth. Add flour mixture and blend on low speed until thoroughly mixed. Dough wil be firm.
Divide dough into 58 balls. Place on ungreased cookie sheets 1" apart. Push finger in center of each ball to form a pit. Put 1/2 tsp. of jam in each hole.
Bake for 22-24 min. or until golden brown with oven set at 300º.

Personal Notes:
Another variation I've done is to omit putting jam on cookie after pressing a pit in the balls. After all baked; and completely cooled; I've added thick chocolate frosting! You can also roll balls in crushed nuts before baking!!!
