3 small zucchini, cut lengthwise into 1/4" thick slices
1 T. olive oil
1/8 tsp. salt, plus more to taste
Pinch of fresh ground black pepper, plus more to taste
11/2 oz. fresh goat cheese, preferably reduced fat
1 T. minced fresh parsley
2 oz. baby spinach leaves (2 c. lightly packed)
1/3 c. fresh basil leaves

1. Preheat a grill or grill pan over medium heat.
2. Discard the outermost slices of zucchini and brush the rest with the olive oil on both sides. Sprinkle with salt and pepper. Grill until tender, about 4 min. per side.
3. In a small bowl, combine goat cheese, parsley, and lemon juice, mashing together with a fork. Put 1/2 tsp. of the cheese mixture about 1/2" from the end of the zucchini. Top with a few spinach leaves and one small basil leaf. Roll up and place seam side down on a platter. Repeat with the rest of the zucchini slices, then serve.
