11/2 T. firmly packed light brown sugar
21/2 tsp. ground coriander
4 cloves garlic, minced
2 tsp. olive oil
11/2 tsp. chili powder
1/2 tsp. ground ginger
1/2 tsp. salt
1/2 tsp. black pepper
1 3lb. flank steak

1. Preheat grill to medium heat. Place the grill rack 8" from heat.
2. Combine the brown sugar, coriander, garlic, olive oil, chili powder, ginger, salt and black pepper in a small bowl. Mix well.
3. Rub the brown sugar mixture on both sides of the steak. Place the steak on the grill and grill for 16 minutes, or until an instant-read thermometer inserted into the center reads 160 ºF, turning once.
4. Cut the steak diagonally across the grain into 1/4" slices and serve.

Steaks and be prepared with the rub and frozen in tight aluminum foil removing excess air. I put the steak wrapped in foil into a ziploc bag. Freeze for up to a month.
