1 – Red onion, cut crosswise into 4 pieces.
6- Tablespoons extra virgin olive oil, plus more for brushing

2 Lemons, cut into 8 slices each and seeded
2 Tablespoons pitted oil-cured black olives chopped
1 Packed cup flat leaf parsley leaves finely chopped
1 Tablespoon fresh oregano leaves finely chopped
1 Clove garlic finely chopped
Eighteen 1 inch thick rib lamb chops (about 3 ½ pounds) trimmed and at room temperature.

Preheat a charcoal grill. Lightly brush the onion pieces with olive oil and season with salt and pepper. Add the onion and lemon slices to the grill, placing the lemon slices around the perimeter so they don’t scorch. Grill the onion turning until lightly browned 6 to 8 minutes.

Chop the lemons and inions together until a coarse paste forms; transfer to bowl. Mix in the olives, parsley, oregano, garlic, and 6 tablespoons oil. Season with Pepper.

Rub the lamb chops lightly with oil and season generously with salt and pepper. Grill turning once, for 5 minutes, then flip onto their edges (fatty and bone sides) and cook until brown, about 1 minute per side for medium rare. Let rest for 2 minutes, serve with lemon relish.
