1/2 C butter
6 TBSP flour
2 C applesauce
1 pkg Onion Soup Mix
2 C water
2-3 tsp curry powder
1/2 tsp ground ginger
1/4 C lemon juice
3 C shelled raw shrimp or 2 pkgs frozen raw shrimp (mom used canned shrimp usually)

In large skillet, melt butter and blend in flour. Stir in applesauce, soup mix, water, curry powder, ginger and lemon juice. Heat, stir until thickened. Add shrimp; simmer 3-5 minutes until shrimp are pink. Serve over hot fluffy rice.

I have no idea where Mom got this recipe, but I loved it as a child. Then I served it to my family, not such good results; but, I STILL LOVE IT!
