Pesto Good & Easy Pizza Recipe

1 TBSP yeast
1 C warm water
1 TBSP sugar
1 tsp salt
2 TBSP oil
2 1/2 C flour

basil pesto
tomatoes (1/4" slices)
mozzarella cheese, grated

Directions:
Directions:
Dissolve yeast in water. Add other ingredients. Beat 20 strokes. Let rest.
Press out to size of pizza pan. Spread basil pesto over dough. Sprinkle with mozzarella cheese. Lay out tomatoes in a single layer. Sprinkle with more mozzarella ( to your liking) cheese.
Bake at 350 til crust is done and cheese is browned.

This was Norene's favorite pizza and she made it frequently! She often served it to her sewing group. They loved it too! Grandma frequently commented when talking about eating at a restaurant, "You cannot get anything as good at a restaurant as you can get at home!" The ironic thing about this comment was that this pesto pizza idea came from a restaurant we went to in Hawaii that served it. We copied their pizza at home!
Mom did like to go out and eat on occasion. One favorite place was Izzy's in Longview, WA. They had some sort of birthday deal...whereby you got a free meal on your birthday or something like that. Mom would bring birthday gift props (not on her birthday) so she would get a freeby. What a riot!! Izzy's was also a buffet so you were not supposed to take a doggy bag home. Mom was not to be deterred. She would just wrap the leftover up in a napkin and shove it into her purse. We still get a laugh out of that!
