1 T vegetable oil
1/3 c chopped onion
1/2 tsp chopped garlic
1 28-oz can crushed tomatoes
1 6-oz can tomato paste
1 tsp dried basil
1 tsp salt, divided
1 15-oz container part-skim ricotta cheese
8 oz part-skim mozzarella cheese, grated
1 large egg
1/8 tsp nutmeg
16 oz mostaccioli or ziti, cooked

Stir onions and garlic in oil over moderate heat until translucent. Add tomatoes, tomato paste, basil and 1/2 tsp of the salt. Bring to a boil, reduce heat and simmer, covered, for 20 minutes. Mix cheeses, egg, nutmeg and 1/2 tsp of salt. Cook the noodles. Pour 1 cup of sauce into a 3-4 quart baking pan. sprinkle with half the noodles and cover with half the cheese mixture. Pour over 2 cups of sauce. Cover with remaining noodles, cheese and sauce. Bake in 350º oven 20-25 minutes (or longer) until sauce is bubbly and cheese is melted.

You can also use only 8 ounces of noodles, but I like more noodles and less sauce and cheese so I use 16. This is a favorite of my kids.
