Jim's Beef Stew

Ingredients
2 lbs stew meat cut in 1 inch pieces
1/2 cup seasoned flour (I use creole seasoning)
1/4 cup canola oil (maybe more but only just enough to brown the meat)
1/2 cup red wine, maybe 2/3, maybe 1 cup :) (that's a smiley face Mom) Don't use more than a cup though, Ya gotta save some for drinking, Right Donnie?
2 cans beef broth
3 cups tomato juice (If you like SPICY, try spicy V8)
2 pkg brown gravy mix
1 teaspoon thyme
1 teaspoon dried parsley
1 teaspoon salt or to taste (don't use more tho)
1 1/2 teaspoon Black pepper
2 or 3 bay leaves
2 med onions halved and cut in wedges
4 stalks celery cut in 3/4 inch pieces
4 carrots cut in 3/4 inch pieces
1 cup fresh mushrooms
1 cup frozen sweet corn
1 cup frozen cut grn beans
1 can diced tomatoes

Cut meat into 1 inch pieces and coat with the seasoned flour. Brown the meat in the bottom of a large oven proof soup pot. (6 or 7 qts) I use a 7 qt cast iron dutch oven. Remove meat and place in a paper towel lined bowl and set aside. Deglaze the bottom with the wine getting all the yummy stuff unstuck. Stir in the beef broth, tomatoes and all the seasonings. Bring to a boil. Stir in gravy mix and add the meat back in. Stir in the tomato juice and all the vegetables. Mix well, cover and place in a prheated oven at 300 for 3 hours, stirring occasionally. Serve with warm crusty bread. Enjoy!
