1 cup quinoa
2 cups water
3 cups broccoli pieces
2 tbsp. oil
4 boneless, skinless chicken breasts
1-1/2 cups light sour cream
1/2 cup mayonnaise
2 tsp. lemon juice
2 tsp. prepared mustard
1 tsp. mild curry powder
1/2 tsp. basil
1 cup shredded cheese

Directions:
Directions:
Set oven to 350ºF. Grease a 9x13" pan or casserole. Bring quinoa and water to a boil; simmer 15 minutes. Spread evenly over casserole. Cook broccoli until tender crisp. Arrange over quinoa. Brown chicken breasts until cooked then slice into strips and place evenly over the broccoli. Combine sour cream, mayonnaise, lemon juice, mustard, curry powder and basil; mix well and spread over the chicken. Top with shredded cheese. Bake 25 minutes, until casserole is hot and cheese is bubbly.
