2-3lbs of lean Pork Meat with bones
2 large cans of tomatoe bits
1-large onion
6- garlic cloves
12- peppercorns
6- cups of water or so
1 -2 large cans of hominy
2 -tbsof oregano
2- tsp of cumin

Garnish:
chopped radish, onion,lettuce, cabbage,limes

Directions:
In a large pot put all ingredients in EXCEPT for the hominey.

Bring to a boil

Skim foam from surface and cover and simmer for at least 1 hour.

Remove pork and put it into a dutch oven, strain broth add to the pork.
add hominey, and once again bring it to a boil , reduce the temperature to a simmer and continue for another 45 minutes.

Place garnish in seperate dishes so all can add what the would like

This dish came from our maid's mother in Mexico, Trina, her daughter Andriana worked for us but her mother came over every Friday, took us shopping and cooked for us. I really like this receipe with chopped cabbage, onions and lime juice added to my bowl. You can also add some chilli pepper to spice it up.

Also, this entire receipe can be made in one large pot and not seperated or strained, just look out for any bones etc while eating if you decide not to strain.
