1 16-oz pkg. medium egg noodles
2 C thinly sliced onions
1 C butter, divided in half
1 C sliced mushrooms
1/2 C sliced water chestnuts (optional)
2 egg yolks
2/3 C sour cream
salt & pepper
browned bread crumbs
1/2 cup grated Parmesan cheese

Preheat oven to 350ºF.

Cook noodles according to package directions. Drain and set aside.

Melt 1/2 of butter in a large saute pan and add onions. Saute onions until they are translucent. Stir in mushrooms and water chestnuts, and then add cooked noodles.

Stir in egg yolks and sour cream. Season with salt and pepper. Pour into a buttered casserole dish and top with other 1/2 cup of butter, Parmesan cheese, and bread crumbs. Bake for 25-minutes.
