For crust:
2 c. of all purpose flour
3/4 c. of butter
For the filling:
1 1/2 lb. of sour apples such as Golden Delicious or Jonagold
1/2 c. sugar
5 oz. of regular and golden raisins
pinch of fresh lemon zest

Directions:
Directions:
* Combine the flour, butter, sugar and half an egg and knead into a smooth ball of dough. Let the dough rest for a little while.
* Roll the dough out to a 10" circle. Line a 9 " springform cake pan with the dough so it covers approximately 1" of the sidewalls. Save the remaining dough.
* Soak the raisins in lukewarm water for about 15 minutes. Pat them dry.
* Peel and dice the apples
* Mix the apples, raisins, sugar and the lemon zest. Fill the cake pan with the mixture.
* Use the left-over dough to make dough strips, arranging them in a lattice pattern on top of the apple mixture.
* Roll the edges of the pie crust over.
* Use the remaining eggs to make a eggwash and brush the dough with it.
* Bake at 300º for about an hour
