Ingredients: 3 chickens, cleaned and cut into pieces* 2 C flour 1/2 tsp salt 1/4 tsp black pepper 1 tsp marjoram 1/4 tsp onion salt oil, for frying
* If desired, you could substitute your favorite 'parts'

Directions:Clean, cut up, rinse and pat dry your chicken parts. Place flour and seasonings in a large plastic or paper bag, shake to mix well. Add one piece of chicken at a time, coating well. Lay on a piece of wax paper.
Heat oil in a large skillet over medium high heat until hot (a drop of water will sizzle when added).
Brown pieces in a single layer, turning to brown all sides. Remove when brown.
Turn down heat to low, add water to cover bottom of pan about 1/2". Place rack in bottom if available. Place chicken in pan, cover and simmer for 45 minutes, until tender. |

Notes: This was our Sunday dinner every night while we were growing up. Ok, some weeks we would have meat loaf or pot roast! We would then have left-over's at least two times that week, one time cold and one time, maybe mom would cut the chicken up into cubes and serve it in something else. Mom would have to put signs on it threatening Paul and John if they ate any of it - that stopped working when they were in high school. While not glamorous, the meat is moist and great for leftovers!
