For the kibbeh shell: (Use my kibbeh recipe) For the meat filling: Use my meat filling recipe or you can use the hot & spicy meatless filling below:

2 medium onions (finely diced and juice squeezed out)
1 stick butter (room temperature)
1 tsp chili pepper or cayenne pepper
1 tsp dried mint
1 1/2 salt
1 tsp allspice
( Mix and combine all the ingredients, taste for salt. It's ready to use )

After you prepared the kibbeh dough and the filing, cut the kibbeh into medium sized ball. Every 2 pcs of kibbeh ball makes 1 kibbeh disc. Use a small bowl fill it with ice water to help you smear and smooth out the kibbeh meat.

Take each ball and flatten it onto your palm, then place them on a tray lined with waxed paper. Prepare another tray with wax paper. Scoop 1or 2 tbsp of the filing and place it in the center of the flat kibbeh disk and spread it around and top it with another flat kibbeh disc. Pinch and seal the two discs together all around and smooth the top. Place it on the waxed paper tray.

Make all of them at once and cover with plastic wrap and put in to refrigerate. Spray the grill with oil before adding the kibbeh. Brush it with oil. Do not flip the kibbeh before it is cooked for 2 to 3 min on each side.

Serve it with salad.
