2 lbs lean beef cut into cubes (Use a food processor to grind the meat twice.)
1 lb bulgar #1 fine (washed and drained)
1/2 cup farina (smeed)
1 med onion cut into cubes
2 tsp salt
2 tsp all spice
1 tsp black pepper
1/2 tsp cumin (optional)
oil for frying

(The Stuffing for the Kibbeh)
2 lb ground beef
1 large onion diced small
1 tsp all spice
1 tsp black pepper
1 tsp salt
4 tbs butter
(In a sauce pan brown the beef add the butter, onion, and all the spices cook for 10 min let it cool to use.)

Wash the bulgur and drain. In a food processor add bulgur, salt, onion, & spices. Add some water, grind the bulgur for 2 min, then add the meat to the bulgur and grind to blend and combine together. (Add water if too dry.)

Have some water in a small bowl to dip your hands when you are forming the kibbeh ball. Make a small ball (about 3 oz) and open in the middle like a small pocket and stuff with about one tsp of the filling. Close it and shape it like a small football. Place it on a tray and in the fridge until you are ready to fry. Use a frying pan, add oil and heat on medium heat. Cook until golden brown in color. Serve it hot with hummus and salad on the side.
