1 stick margarine
1 med onion, diced
1 can cream of mushroom soup
1 small jar of cheese whiz or 8 oz. velveeta cheese, cubed
1 c. uncooked minute rice
2 10 oz. box chopped frozen broccoli, thawed and dried
1/4 c. water



Directions:
Directions:
In a saucepan, cook onion in margarine until tender. Add remaining ingredients and stir over low heat until broccoli is covered. Place mixture in a pammed baking dish. Bake at 350º for 30 to 40 minutes, until rice is tender and heated through.

This can also be microwaved. Stir about every 2 to 3 minutes until rice is done and heated through (about 10 minutes).

Anything with melted cheese was a favorite of the boys. We often had this with grilled chicken during the summer time when we ate on our deck at 2210 E. 16th! A favorite during the baseball season since it was very quick and easy.
