Ingredients to make the dough shells:

5 cups yellow farina (smeed naaem)
2 cups flour
1/2 tsp salt
3 1/4 lbs sweet butter (melted)
3 tsp mahlab ground (black cherry pit)
1 tsp nutmeg
1/3 cup rose water (optional)
1 cup powdered sugar to decorate
warm water to knead about 2 cups

The 3 kinds of stuffing:

1. 1 lb chopped walnuts mixed with 4 tbs sugar, and 2 tsp cinnamon, 2 tsp rose water.
2. 1 lb chopped pistachios, mixed with 4 tbs sugar, 2 tsp rose water.
3. 2 Packages of minced dates, 2 tsps of cinnamon, and 3 tsps of butter. Mix all
together, cut and mold into small sized balls.

In a large tub, add the farina, flour, salt, mahlab, nutmeg and mix. Then add melted butter and combine the dried ingredients with the butter very well to blend together. Mix the water and rose water together and began to add them slowly as needed over the dried mixture. Continue rubbing mixture between your hands, then kneading lightly to combine. If the dough looks good enough to work with.You can add more flour if the dough is too soft. Make the dough roughly to the size of large walnuts.

With your finger, make a hole in the middle and stuff it with 1 tsp of stuffing (your choice of stuffing.) Make it into the shape you like, by using a mold for it. Place the stuffed dough on a baking sheet. After you finish all of the cookie dough and stuffing it, preheat your oven to 375º. Bake for 10 to 15 minutes, until cookies reach a light golden color. Do not remove the cookies off of the sheet until they are completely cooled. Store the cookies in a closed container until you are ready to serve. Sprinkle some powdered sugar to decorate when serving them.
