This is the ingredients to make the dough shells
4 cup Yellow farina ( smeed naaem)
2 cup flour
3 1/4 lb sweet butter (melted)
2 tsp mahlab (ground black cherry pit )
1/2 tsp salt
1/3 cup rose water, if you prefer
warm water to knead about 2 cup
1 cup powder sugar to decorate

( The three kind of stuffing)
1#. Mix chopped walnuts,sugar, cinnamon.
2# Chopped pistachio,sugar and cinnamon.
3# 2 Package minced Dates and 2 tsp of cinnamon and 3 tsp of butter.mix all, and cut it to a small size ball.

In a large tub add the farina,flour,salt, mahlab mix, then add melting butter, rub the dried ingredients with butter very well to blend. Mix the water and rose water together and began to add them slowly over the dried mixture and rubbing between your hands then kneading lightly to combine.
if you see the dough good to work with stop adding the water.
you can add more flour if the dough to soft.
Make the dough to a size large walnuts and with your finger make a hole in the middle and stuff it with 1 tsp stuffing of your choice of stuffing.
Make the shape you like by using a mold for it .
Place the stuffed dough on a baking sheet. After you finish making all of the cookie dough. Preheat oven on 375º - bake for 10 to 15 minute, until light golden color. Out the oven do not remove until its cool.
Keep the cookies in a closed container until you ready to serve, sprinkle some powder sugar to decorate.
