3 cups cooked chicken, diced
1 medium onion, diced and sautéed
1 can water chestnuts, drained and chopped (Tim doesn't like these, so I leave them out)
2 cans French green beans, rinsed and drained
1 medium can pimentos, rinsed and drained
1 can cream of mushroom soup ( I sometimes use cream of chicken)
1 cup mayonnaise (Hellmann of course, and I use low fat)
1 box Uncle Ben's wild rice, cooked according to directions.
1 cup grated sharp cheddar cheese

Mix all ingredients together and pour into 3 quart casserole dish. Bake at 300 degrees for 25 minutes. Freezes well.

I got this recipe from my friend Margaret at Student Health at Wake Forest. It is delicious. She would bring it to lots of dinners and everyone loved it.
