Ingredients: 1 lb sole fillets, skinless (Tilapia is good as well) 1/2 lg green pepper 2 Tbsp finely chopped onion 1 clove garlic, minced 1 Tbsp cooking oil 1 16-oz can tomatoes, undrained 1 8-oz can tomato sauce 1/2 c dry white or red wine* 3 Tbsp snipped fresh parsley or 1 Tbsp dried 1/4 tsp dried oregano 1/4 tsp dried basil 12 oz shelled shrimp 1 (6 1/2 oz) can minced clams, undrained Optional: add 1 bag frozen seafood medley and/or frozen mussels
*Tip: buy a 6 pack of single serving wine bottles to keep on hand for cooking

Directions:Cut fillets into 1 inch pieces, set aside. Cut green pepper into 1/2 inch dice. In 3 qt. saucepan cook green pepper, onion and garlic in oil, till onion is tender but not brown. Cut up tomatoes, add to onion mixture. Stir in tomato sauce, wine, parsley, oregano, basil, 1/2 tsp salt, and dash of pepper. Bring to a boil, reduce heat. Simmer, covered, 20 minutes. Add fish pieces, shrimp and clams to tomato mixture. Bring just to boil, reduce heat. Simmer covered 5 to 7 minutes or till fish flakes and shrimp are pink. 6 servings. |

Notes: I made this recipe regularly when my kids were school aged and it was one of my go-to favorites. It is quick, easy and delicious. I was upset a few years back when I lost the recipe card. Luckily I had copied it for my Mom, and recently found it when I was going through her recipes. It pays to share! For a special occasion use 1 lb jumbo shrimp. For quick family dinner buy any size peeled uncooked shrimp. Cod loin works well instead of sole (or any firm white fish).
