4 cups sugar
1 cup dark karo syrup
2/3 cup hot water
4 egg whites (have these at room temperature)
a pinch of salt
vanilla
nuts

Directions:
Directions:
Cook sugar, water and syrup in a heavy pan until a small amount dropped in cold water makes a cracking sound. (my thermometer reads about 300º). When the thermometer gets to about 280º I start to beat the egg whites. You don't want them to be sitting too long once they are whipped. Add the pinch of salt to the egg whites when you begin to beat them. Once the cooked syrup gets to the cracking stage, remove from heat and pour about half the mixture to the egg whites. Continue beating this mixture. As soon as it becomes smooth, add the rest of the syrup and continue beating. I find that I have the best results when I beat everything on high for about 3 minutes. Then I reduce the speed of mixer to a lower speed and continue beating until it starts to lose its shine. At this point you can add the vanilla and nuts. Watch it closely. It turns pretty quickly. Spoon out onto waxed paper. NEVER TRY MAKING THIS ON A RAINY OR DAMP DAY.
