1 Tbsp butter
˝ sweet onion chopped
2 garlic cloves minced
1 (16 oz) bag frozen turnip greens, thawed
˝ c chicken broth (or chicken bouillon cube in water)
˝ tsp dried crushed red pepper
2 Tbsp flour
1 c milk
5 oz cream cheese, cut into pieces
Salt
Shaved parmesan cheese

Directions:
Directions:
Melt butter in skillet, stir in onion and garlic. Saute 3 minutes. Stir in turnip greens, chicken broth and red pepper, cook 4 to 5 minutes until liquid evaporates. Sprinkle green mixture with flour and sauté 2 minutes. Gradually stir in milk and cook stirring occasionally 3 minutes. Add cream cheese and mix. Salt to taste.

My son John loved the turnip green casserole when we visited the historic Hotel Talisi in Tallassee Alabama 10 years back. Here is a version of that recipe. The hotel was filled with lovely antiques, and the Sunday buffet was attended by many in the surrounding area. Sadly the hotel was burned to the ground by a vagrant less than a year after we visited, and never rebuilt.
