1 Fennel Bulb
1 Bundle of Roman lettuce
1 small package of Walnuts (crushed)
1 T. of olive oil
Dash of lemon juice
salt and pepper to taste
Fruit, your choice, suggestions, diced pears, peaches, strawberries, etc
Dressing, your choice, we use Chef Buddy's fresh made Blue Cheese Dressing

Directions:
Use salad bowl to mix. Steel or glass and taken from the frig prior to making salad in hot weather, is the best. Dice all of the fennel, tops etc. and tear Roman into salad pieces. Add olive oil, lemon juice, salt/pepper and toss. If preparing the salad ahead of time, wait to add fruit prior to serving. Toss all together and you are ready to serve with your choice of dressing. When deciding on a dressing remember the fruit you have chosen and pair dressing accordingly. Enjoy!

We presented this salad at a "Taste of Muncie". People had reviewed dishes that were being presented and many expressed that this salad was one reason they had came to the event. Rave reviews for the salad! So, if you haven't yet used fennel, this salad is a great way to start.
