1/4 c flour
1/4 c cornmeal
1/2 tsp pepper
1/2 tsp Lowrey's Seasoning
1/2 tsp garlic powder
1/8 tsp cayenne pepper (optional)
1 egg
2 T water
3/4 c crushed corn flakes
2 T grated Parmesan cheese
1 lb fish of choice (tilapia, cod, haddock, pollock, etc.)

Directions:
Directions:
Preheat oven to 425º. In a small bowl, mix flour, cornmeal, and seasonings. Set aside. In a separate bowl, whisk together egg and water. In a third bowl, mix together corn flakes and Parmesan cheese. Coat each fillet in flour mixture, then egg, and finally cornflake mixture. Spray baking sheet with non-stick spray and bake for 10-15 minutes until fish is flaky.
