Spinach and Mushroom Lasagna Recipe

1 lb box lasagna noodles
12 oz shredded mozzarella
15 oz ricotta cheese
1 c Parmesan
10 oz chopped, frozen spinach (defrosted and drained)
1 egg
SAUCE"
1 lb mushrooms
6 TB butter
1.2 c flour
1 c cream
2 c milk
1 tsp cayenne pepper
1 tsp nutmeg
salt to taste

Preheat oven to 350º
Make Sauce:
Saute mushrooms in butter till wilted, approx 6 min.
Blend in flour, salt, pepper
Gradually stir in milk and cream
Mix and cook till thick

Boil Noodles approx 7 min. w a tad of oil

Make Spinach/Cheese Mixture:
Beat egg
Add 3/4 c Parmesan, ricotta and spinach
Mix together

In a 9 x 13 baking pan, layer some Sauce, Noodles, Spinach Mixture, 1/3 of the Mozzarella , repeat
Bake at 350º till bubbly (20-30 minutes). Let sit 5 minutes before cutting
