2 tbsp. dry active yeast
2 tsp. sugar
2 c. warm unflavored milk (105º-110ºF)
1 1/2 c. white rice flour
1/2 c. brown rice flour
3/4 c. potato starch
1/2 c. tapioca starch
1 tbsp. xanthan gum
1 1/2 tsp. kosher or fine sea salt
1 tbsp. baking powder
2 large eggs
1/4 c. butter, melted
1/4 c. honey
1 tsp. apple cider vinegar

Directions:
Directions:
Combine yeast, sugar, and warm milk in a small bowl and whisk to dissolve the sugar. Let sit 6-8 minutes.
Combine flours, starches, xanthan gum, salt, and baking powder. Mix for 30 seconds to combine and break up any lumps.
Add yeast mixture, eggs, butter, honey, and vinegar. Mix on medium-low until combined. Then turn mixer on high and mix for 3 minutes.
Preheat oven to 375ºF. Grease 2 standard muffin pans.
Spoon batter into muffin pans, filling about 3/4 full.
Cover with clean kitchen towel and place in a warm, draft-free place. Let rise for 35 minutes, or until dough has almost doubled in size.
Please rolls in preheated oven and bake until golden brown.
