2 pkgs dry yeast
1/4 C warm water (for yeast)
3/4 C sugar
1tsp salt
3/4 C + 2 T oil
2 eggs
1 1/2 C water
6 1/2 T evaporated milk
1/2 tsp lemon extract
8 C flour

Melted oleo, cinnamon and sugar for Cinnamon Rolls


Directions:
Directions:
Dissolve dry yeast in warm water.
When bubbly, add remaining ingredients.
Mix with a spoon, knead 3-4 minutes until sticky.

Placed in a greased bowl, cover and let rise for 1 hour.
Punch down and let rise one more hour.

For Cinnamon Rolls:
Divide dough into 2 parts.
Roll out 1/4 " thick rectangles.
Brush with oleo.
Sprinkle generously with cinnamon and sugar.
Roll and cut into 1" sections.
Place on a greased pan and let rise 45 minutes.
Bake at 375º for 30 minutes until nicely browned.

For Pizza:
Flatten into round piece of desired thickness (remember, it will rise more!) on a floured cloth.
Place on oiled pizza pan and press to edges.
Cover and let rise 45 minutes.
Top with pizza sauce and your favorite toppings and bake 30 minutes or so.

For "sweet" rolls:
Roll onto floured cloth, approximately 1/2" thick.
Cut into triangles.
Roll into crescent rolls, starting at widest end, rolling towards point.
Cover and let rise 45 minutes.
Bake on lightly oiled sheet for 10-12 minutes until lightly browned and cooked in center.
