1 1/2 C flour
1/2 tsp. Baking powder
1/2 tsp. salt
1 1/4 C granulated sugar
4 tsp. lemon zest
2 TBSP. lemon juice
4 TBSP. butter melted and cooked to a golden brown (don't over cook)
3 TBSP. vegetable oil
1 large Egg
1 large egg yolk
1 tsp. vanilla
1 tsp. lemon flavoring (optional)
1/2 C powder sugar (set aside)

Directions:
Directions:
Melt butter and brown golden in a skillet, set aside to cool. Combine flour, baking powder, and salt. Grate lemon zest and stir into granulated sugar to allow sugar to absorb the flavor. In a separate bowl combine egg, egg yolk, oil, and lemon juice. Make a well in the flour, add sugar and pour in egg mixture. Stir in melted butter and vanilla, and lemon flavoring. Chill for at least 1 hour.

Preheat oven to 350º

Using a scoop, roll balls in powder sugar and place on cookie sheet. Make sure balls are thoroughly covered in powdered sugar. Bake for 10-12 minutes. Cool for 5 minutes on pans before removing to rack to cool.
