4-6 lbs potatoes
1 large onion
4 cups chicken broth
½ stick butter
1 ½ tablespoon salt
1 tablespoon pepper
1 pint heavy whipping cream
1 – 8oz sour cream
2 cups shredded cheese
1 small package real bacon bits
Chives, optional

Directions:
Directions:
Chop onion and place in crock pot. Cut potatoes into cubes and place in pot with butter, salt and pepper. Pour chicken broth in for liquid. Cook on high until potatoes are tender. With whisk, lightly mash some of the potatoes to make the coup thicker. Turn pot down to low. Add heavy whipping cream, sour cream, bacon bits, chives and cheese. Stir. Let soup heat up again and serve.

Tips: I use 8 – 10 lbs of potatoes, 1 whole stick of butter and 4 cans of broth. Instead of chives, I use the sour cream and chives dip. This gives it more flavor and holds up better for long cooking. Note: Potatoes take longer to cook in the crock pot for some reason. So this is a good recipe to start in the morning and cook all day.
