2 c sliced peaches*
1 c raspberries (fresh or frozen)*
*OR 3 c sliced peaches or apples or pears
3/4 c sugar
dash of cinnamon or nutmeg
Grated rind and juice of 1 lemon
1 1/2 Tbsp flour
4 Tbsp butter, melted

1 1/2 c flour
3/4 c sugar
1 1/2 tsp baking powder
1/4 tsp salt
3 egg yolks (or 2 eggs)
1 1/2 Tbsp melted butter
3/8 c milk (1/4 c plus 2 Tbsp)

Directions:
Directions:
1) Preheat oven to 425º. Grease a 10 inch glass pie dish. Cover the bottom with 3 cups fruit, arranged decoratively if desired.
2) Sprinkle the fruit with 3/4 c sugar, lemon rind and juice, and cinnamon or nutmeg if using. Dredge with 1 1/2 tablespoon flour. Pour over surface 4 Tbsp melted butter.
3) In a mixing bowl: Sift before measuring 1 1/2 c flour, then sift or whisk with 3/4 c sugar, baking powder and salt. Mix eggs, 1 1/2 Tbsp butter and milk, and add to flour mixture. Beat with swift strokes until blended. Cover the fruit with the batter. Bake for about 30 minutes. Poke with a small knife and check to make sure it is set, it may need additional time. Reverse it on a large platter. Cool slightly.
