2 lbs stewing beef
6 potatoes peeled, washed and quartered
6 carrots peeled, washed and sliced
3 stalks celery chopped
1 onion chopped
2 cloves garlic diced
1 large can diced tomatoes
4 cups beef broth or enough to cover everything
1/4 cup flour for thickening
salt and pepper to taste

Directions:
Directions:
In dutch oven or large pot brown beef in oil. Add carrots, onions, celery and garlic and saute for about 10 minutes. Add tomatoes, seasonings and broth with flour stirred into broth before adding to pot and bring to boil. Reduce heat to simmer and cook for 3 to 6 hours until veggies are soft and stew is thickened.

You can add any veggies you like. If you have frozen veggies you can use those as well.
