3 or 4 lb roast beef (if using Prime Rib don't use Ranch dressing)
garlic powder
Ranch salad dressing

Gravy:
Drippings from roast when done.
1/4 cup flour
2 cups water

salt and pepper

Preheat oven to 400ºF.

Cover top of roast with ranch dressing just enough for a light covering of the roast. Sprinkle garlic powder on dressing as to your taste.

Place roast in roasting pan uncovered for 15 minutes then turn oven temp down to 325º and roast according to your tastes (rare, med, well done) Usually 25 minutes per pound.

About an hour before roast is ready you can add peeled potatoes cut in quarters and peeled carrots to roasting pan and cook your veggies with the roast.

Remove from oven when done and let rest for 15 to 20 minutes covered.

Gravy

In small pot pour roast drippings in. Mix flour with water in measuring cup and stir til all lumps are gone (you don't want lumpy gravy!) Pour water with flour into pot with roast drippings stir well. Add garlic powder, salt and pepper as to your taste. Turn on medium heat and continuously stir until gravy is thick. If too thick add more water, if not thick enough mix more flour in water and add to gravy. Taste and adjust as required.

While roast is resting turn oven up to 400ºF and put yorkshire pudding in. While yorkshire is cooking make gravy.
The trick to smooth gravy is put the flour in first then add cold water and stir before putting into pot with drippings. You can also make onion gravy with onion soup mix, add 1/4 cup flour and 2 cups water and cook as above.
