2 cups flour
1 Tbsp baking powder
1 egg
1 cup buttermilk or 1 cup milk with 1 tbsp vinegar mixed in
1/2 cvup vegetable oil
cooked ham diced (about 1/2 cup to 1 cup your choice)
1 1/2 cup grated old or sharp cheddar cheese

Heat oven to 450ºF. Lightly grease muffin tins.

In large bowl stir flour, baking powder and set aside.

Whisk together egg, milk, & oil in small bowl. Stir in ham and cheese. Using rubber spatula, stir in egg mixture to dry ingredients til combined. Don't over mix.

Fill muffin tins 1/2 way, place in oven and lower temp to 400ºF. Bake til golden brown, about 20 minutes.

Remove from tin and let cool slightly and serve still warm with butter.
