2 cups sifted flour
1 cup brown sugar
1/2 cup sugar
1 t nutmeg
1/2 t ginger
1 t cinnamon
1 t baking soda
1 t baking powder
1/2 t salt
2 cups oatmeal

1 cup butter/shortening
2 eggs
1 t vanilla
1 1/2 cup grated fine carrots

Frosting
1 8 oz. cream cheese (room temp.)
1 stick of unsalted butter (room temp.)
1 t vanilla
Sift 1 cup powdered sugar

Directions:
Directions:
Mix dry ingredients together. Add in butter/shortening, eggs, and vanilla. Mix well. Add in carrots and mix well. Chill dough. Mix Frosting ingredients.

Bake 10-12 min. 350.
Once cool, Fill flat sides of two cookies with frosting and press together.
