2 cups flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup butter, room temp.
3/4 c brown sugar
2 eggs, beaten
1 1/2 tsp vanilla
4-5 large mashed bananas
1/2 cup chopped pecans or walnuts (optional)

Preheat oven to 350ºF. Lightly grease 9 x 5 inch loaf pan.

In a large bowl, combine flour, baking soda, salt, cinnamon and nutmeg. In a separate bowl, cream together butter and brown sugar. Stir in eggs, vanilla and mashed bananas until well blended. Stir bananas mixture into flour mixture and stir just until moistened. Pour batter into prepared loaf pan.

Bake 55 - 65 minutes or until toothpick inserted into center comes out almost clean. Check often as this is better a little under cooked to be moist.
