2 TB butter
2.5 # medium turnips, peeled, thinly sliced
1TB thyme, chopped
3 oz guanciale, slowly cooked until just shy of crispy
1 ts salt
1/8 ts cayenne
1 cup heavy cream
1 cup parm, finely grated

Directions:
Directions:
Preheat oven to 400 degrees
melt butter until lightly browned in 12 inch skillet, take off heat
Arrange 1/3 of sliced turnips in skillet, sprinkle with 1/3 of thyme, guanciale, salt, cayenne
Repeat 2 times
Put skillet on stove top, medium heat, cook until bottom layer is golden brown
add cream, cover skillet with foil, bake until turnips tender
remove foil, sprinkle with Parmesan, bake uncovered until golden and bubbling, 10-15 mins
