One large baking potato per person
Slices of cheddar cheese

Bake potatoes unwrapped - skins need to be hard enough to act as containers. I usually add a couple potatoes so there is plenty for each serving. When potatoes are well baked, cut in two and scoop out potato into a sauce pan with plenty of butter waiting to be melted by the hot potato. Mash potatoes with hot milk and season with salt and pepper. They may not be as fluffy as boiled potatoes, but you should be able to work with them enough to be pretty soft. Scoop into the best half of the saved potato skins. Top with slice of cheese and melt in oven or under broiler.
