2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 and 1/2 cups vegetable oil
4 eggs, beaten
3 cups finely grated raw carrots
2 cups sugar
2 teaspoons cinnamon
ICING:
1 (16 ounces) box confectioners' sugar
1/2 cup margarine, softened
1 (8 ounces) package cream cheese, softened
2 teaspoons vanilla
1 cup chopped pecans
1 (3 and 1/2 ounces) can shredded coconut, optional

Directions:
Directions:
Sift together flour, soda, and salt. Add oil, eggs and carrots; mix well, for 2 or 3 minutes on medium-high speed of electric mixer. Add sugar and cinnamon; beat well for 1 or 2 minutes. Grease and flour three 8-inch cake pans, pour in batter. Bake at 350º for 40 minutes or until center is firm. Also makes 60 cupcakes that require 20 minutes at 350º. Cool and frost with the following icing. Cream margarine and sugar. Add cream cheese, vanilla and pecans. Mix and add coconut. Spread evenly between layers and on outside of cake.
