Preparation:
1. Adjust oven rack so the roast will be in the middle of the oven.
2. Preheat oven to 500 degrees
3. Season the roast well with salt and pepper and/or Grandpa Lynn's Seasoning
Rub in well on top, bottom and sides.
4. Place roast fat side up (rib bones down) in a lightly oiled shallow roasting pan.
DO NOT COVER!
5. Insert meat thermometer into center of roast. It should not touch bone or fat.

1. Roast for 15 minutes at 500º, then turn dow to 350º. Do not open oven at
this time so heat won't escape
2. Roast beef for 18-20 minutes per pound for rare (140º on thermometer),
22 to 24 minutes per pound for medium (160º) or 26 to 28 minutes per pound
for well done (170º).
3. Remove roast from oven when thermometer reads 5º to 10º below desired
final temperature.
4. Allow the roast to rest in a warm place, lightly covered with foil, for 20 to 25
minutes before carving. This should allow the temperature to rise to
desired doneness and allow the roast to absorb seasonings, firm up, and
retain more of its juices.
5. Carve slices to desired thickness and serve with warm au jus.
