Pre-baked pie shell

Filling:
1-1/4 cps sugar
1/4 cup cornstarch
3 Tbsp. flour
1-1/2 cups water
3 egg yolks, lightly beaten (save whites for meringue!)
2 Tbsp. butter
1-1/2 tsp. grated lemon peel
1/3 cup lemon juice

Directions:
For filling, in large saucepan, combine sugar, cornstarch, flour and salt. Gradually stir in water until smooth. Cook and stir over medium heat until thickened and bubbly. Reduce heat, cook and stir 2 minutes longer. Remove from heat. Stir a small amount of hot filling into egg yolks. Return all to the pan, stirring constantly. Bring to a gentle boil and cook and stir 2 minutes longer. Remove from heat and stir in butter and lemon peel. Gradually stir in lemon juice just until combined. Pour into baked crust and top HOT filling with Meringue (included in this book). Seal meringue to edges of crust.
