2 cups sifted plain flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 cups sugar
3 cups grated carrots/slightly packed)
1 & 1/2 cups Mazola corn oil
3 large eggs

Directions:
Directions:
Sift together flour, soda, cinnamon, salt and sugar. Add oil and stir until well mixed. Add eggs all at once. Beat on medium speed until well mixed. Add carrots, mix well. Bake in three layers at 350 degrees for 30 to 40 minutes.
Icing: 1 box 10-X Sugar, 1 stick of oleo or butter, 1 - 8 oz. cream cheese, 1 tbsp. Mazola oil, 2 tsp. Vanilla,1 cup pecans (or pecan meal). Mix well and
add one cup of pecans. Ice cake when cool. If icing appears to thick, add a little milk.
