Crust:
1/3 cup brown sugar
1/4 tsp. salt
7/8 cup flour
1/4 tsp. vanilla or coconut extract
1-1/2 cup shredded coconut
1/4 cup butter

Filling:
1 - 8 oz. package cream cheese, room temperature
1-3/4 cup sugar
pinch salt
3 Tbsp. flour
4 large eggs
1/2 cup fresh squeezed lime juice (about 2 limes)
lime zest

Directions:
Directions:
Crust: Combine all crust ingredients in medium bowl. Mix or process until mixture is crumbly. Set aside 1/2 cup of the crumbs and press the remaining crumbs into the bottom of a square pan lined with parchment paper than hangs a few inches over the edge (this allows the bars to lift out easily). Bake at 350º for 15 minutes until golden brown.

Filling: In a medium bowl, beat cream cheese until soft. Add sugar and salt until well blended. Stir in flour and then beat in eggs one at a time. Stir in lime juice and zest, mixing until smooth. Pour cream cheese mixture over baked crust. Bake bars for 15-25 minutes until edges are starting to turn golden. Remove bars and sprinkle reserved crumbs on top. Bake an additional 15 minutes until bars are firm on the edges and soft in the center. Let cool at room temperature for an hour and then refrigerate at least 4 hours.
