1 lb. mild sausage or 1 lb. bacon, browned
1lb. grated Swiss or sharp cheddar cheese
Mix together:
1 dozen eggs
1-1/2 cups whole milk
1/2 green pepper, diced
3 green onions, chopped
3/4 tsp. dry mustard

The day before serving;
Butter a 9X13 baking dish.
Pace slices of bread ( crusts removed ) on bottom of dish, cutting to fit .
Sprinkle grated cheese and meat on top of bread slices.
Pour egg mixture over top. Cover with foil and refrigerate overnite.
In the morning or before baking, mix;
1 can cream of mushroom soup
1/2 cup milk
Fresh mushrooms ( opt. )
Pour over quiche.
Cover tightly with foil and bake 1-1/2 hours at 300º .
Take out of oven, uncover and let set for 20 minutes. Cut and serve
