1 stick unsalted butter, softened

1 1/4 cups cake flour
1/4 cup solid vegetable shortening
2 cups sugar
3 large eggs
2 tsp vanilla extract
3/4 cup unsweetened natural cocoa powder (do not use dutch-process or other alkalized cocoa!!)
1 tsp baking powder
1tsp baking soda
1/2 tsp salt
1 cup milk

FILLING
3 cups water
2 1/2 cups sugar
1 Tb light corn syrup
1 1/2 cups unsweetened natural cocoa powder
2/3 cup cornstarch
6 Tb unsalted butter cut into small cubes
1/2 tsp vanilla extract

Preheat oven to 375
butter 2 9 inch round cake pans, dust with Flour
line bottoms with parchment paper.
With mixer fitted with Whisk attachment, beat the softened butter with shortening until creamy, add sugar and beat until fluffy (3 mins med speed).
Add eggs one at a time, beating well.
add vanilla.
at low speed, beat in cocoa powder, baking powder, baking soda, salt.
Ad the 2 1/4 cups of cake flour and the milk in 3 separate alternating batches
Remember to scrape!
Pour into cake pans evenly.
Bake in center of oven four about 30 mins, check for done-ness,let cool 15 minutes, then take out of pan and cool on rack.

Filling
in large saucepan, combine 2.5 cups of the water with the sugar, corn syrup, and cocoa powder, bring to boil, whisk constantly. In bowl, whisk cornstarch with 1/2 cup of water until smooth, whisk into the cocoa mixture. cook over moderately high heat, whisking constantly until thick (3 mins)
take off heat, whisk in butter, vanilla, salt. Scrape into a bowl
Press a sheet of plastic wrap onto the surface of the filling, let cool, refrigerate until firm 45 mins.
