1 carrot, peeled, cut into 1" pieces
4 garlic cloves
2 tsp fresh oregano
1/4 tsp crushed red pepper flakes
1/2 cup coarsely chopped flat-leaf parsley, divided
1 28 oz can whole peeled tomatoes
1/4 cup olive oil
1 # hot or sweet italian sausage, casing removed
1 # ground pork
season
1 Tb tomato paste
1 # mezz rigatoni or penne rigate
3/4 cup finely grated parmesan or grana padano plus more

Pulse onion, carrot, celery, garlic, oregano, red pepper flakes, 1/4 cup parsley in food processor.
Puree tomatoes WITH juice.

In large heavy pot, medium heat, brown the sausage, add pork, brown that.
Add rest of ingredients, boil, then simmer, reduce until desired consistency, cover and simmer for 4 hours.
make sure seasoned!
